For lovers of nature, the desert and off-road travel, Mitzpe Ramon and Makhtesh Ramon are one of Israel's most impressive playgrounds. In autumn, winter and spring (and at sunrise and sunset in summer), the Makhtesh offers countless hiking trails, rare geological formations, desert blooms, rock pools that fill after the rains and challenging off-road tracks.

Whether you came for a few hours on foot or fancy a jeep or RZR trip deep into the Makhtesh, here is the guide to the winning combination of Makhtesh Ramon's terrain and the town's nightlife afterwards.

1. Hiking Trails and Lookouts Not to Miss in Makhtesh Ramon

Makhtesh Ramon has trails for every level, from short, accessible walks to routes for seasoned hikers:

  • The cliff promenade and Mount Gamel: An easy, panoramic walk along the rim of the Makhtesh, linking the Ilan Ramon Visitors Center to magnificent lookouts over the whole crater. It is also the best place to meet the local ibex along the way (see also our guide to meeting the ibex in Mitzpe Ramon).
  • HaMinsara and the coloured sands: A short, easy loop in the heart of the Makhtesh, passing between hexagonal quartzite columns that look like stacks of sawn timber, for a close look at the site's unique geology.
  • The Nekarot Horseshoe and Shen Ramon: For half-day or full-day desert hikes, the area of Be'erot campsite, the Nekarot Horseshoe and Shen Ramon offers desert canyons, remains of the Nabataean Incense Route and wild landscapes.

2. Jeep Tours, Rappelling, Camel Treks and Trail Shuttles

Huge parts of Makhtesh Ramon, Nahal Nekarot and the Zinim cliffs are reachable only by 4x4 or on guided off-road tours. Mitzpe Ramon and the Spice Route Quarter are home to experienced local guides and field operators:

  • Alen Desert Tours (Negevland): A long-standing field operator (since 1994) running guided jeep tours, cliff rappelling on the crater rim and mountain-bike outings for couples, families and groups.
  • Desert Time (Zman Midbar): Off-road and jeep trips, desert content experiences and field hospitality connecting travellers to the stories, geology and quiet of the Negev Highlands.
  • Noam Outdoors and Ramon Desert Tours: Certified guides for 4x4 jeep tours, cliff rappelling and sunset and stargazing trips in the crater.
  • Negev Trails and Nomis 4x4 (Nomis BaShetach): Alongside guided 4x4 tours across the Negev, both veteran operators specialise in hiker logistics on the Israel National Trail and crater routes — trailhead drop-offs and pick-ups, water caches and field supply runs deep in the desert.
  • Effie Perry – Desert Explorer, and Ben Midbar (Camel Tours): For those looking to explore the desert in depth on foot, Effie Perry (over 20 years of guiding experience) leads nature walks covering desert flora, wildlife tracking and survival skills; while Ben Midbar runs authentic camel treks along the cliff and Bedouin hospitality.
  • Razer Ramon and HaOfan in the Spice Route Quarter: Razer Ramon offers self-drive RZR trips facing the crater, and HaOfan serves cyclists riding the desert singletracks.

3. Back from the Trail Hungry? Where to Stock Up, Eat and Drink in Town

One of the great pleasures of a day in Makhtesh Ramon is the moment you climb back up Ma'ale HaAtzmaut into town at three or four in the afternoon and head straight into the Town Center or the Spice Route Quarter (and if you landed on an especially cold or rainy day, read our guide to Mitzpe Ramon in winter and rain):

  • Stocking up before the trail and cliffside coffee: For dried fruit, nuts, fresh produce and organic trail snacks, stop by the community cooperative HaAgala. For pastries and sandwiches for the pack, stop at Lasha, Man Desert Patisserie, or grab coffee at Cafe Gina and HaRova Café — or right on the cliff promenade at Kiosk Cafe Ramona and Little Ramona.
  • Hot, filling food after a hike: At Hummus Yona fresh warm hummus brings your energy right back; at Sumsumyia rich Mediterranean grilled meats and vegan dishes await; at Paco ve Nany Italian stone-oven pizza; and in the Spice Route Quarter enjoy homestyle stews at HaKatze, desert trattoria plates at Café TZIN and seasonal chef dishes at BOTZ Restaurant.
  • Beer, wine and a show to end the day: Celebrate finishing a trail with an ice-cold draft beer at HaHavit (The Barrel) (open since 1987), a live show at HaBerech Pub and Rehem, or a glass of wine and cheese platter at Midbar Wine.

Want to know what is open right now and which show is on tonight after the hike? When you finish the trail and come back up to town, open Meetzpe: you'll find Mitzpe's restaurants, pubs, live shows and events there, and can check opening hours.
